1) Signature feature.
Whenever I go to use my signature feature, the entire screen goes grey. No options appear, and the only way to get out of this is to press ESC. This issue renders this feature inoperable.
2) Edit
None of the edit features are appearing. I'm unable to delete pages.
I think I'm in modern acrobat. I'm not sure why they don't call it Pro anymore but it is called pro in my creative cloud package - I'm almost positive I'm not using reader. One known issue is that I had another Adobe account on my computer at one time. I went to great lengths to completely uninstall every file from the previous subsciption, and I do seem to have all of my apps under my new account. I have a suspicion this is still causing problems.
@Richard388084647msv 'None of the edit features are appearing' sounds like you don't have Adobe Acrobat Pro. I would uninstall all Adobe Reader, Acrobat and Adobe Pro.
I would use the tool called, Adobe CC Cleaner Tool: https://helpx.adobe.com/photoshop-elements/kb/elements-installation-error-CC-cleaner-tool.html just to make sure all the files related to the issue is completely wiped out

I agree with @creative explorer about accidentally using Acrobat Reader.
After running the cleaner tool, you can install the app from the direct installer instead of using Creative Cloud. The installer can be found here: Download Acrobat installer for Enterprise term or VIP license (adobe.com)

Once the apps are completely wiped, then go ahead and download the Adobe Acrobat Pro from creativecloud, https://www.adobe.com/home?locale=en or https://www.adobe.com/apps/all/all-platforms
Hopefully this does the trick for you! I have no issues with the signature or edit the pdf features.
