Signatures

I am having a very frustrating experience with signatures using Acrobat Pro 2024. It's outrageous to me that the system only lets you create one signature and one set of initials at a time. The way I've been getting around this when both my wife and I need to sign something is to delete one signature, add another, then add it to the document. Now the system won't let me even delete the existing signature. I click the "X" next to the name and nothing happens (see attached screen shot). Why is this so difficult?!!!!!!
