So confused: E-signature vs. Digital signature

Hello-

I don't understand what is going on....yesterday I added a signature line to a form using this tool with associated Digital Signature Properties

And now today on another form I have the option of this tool:

which does NOT give me Digital Signature properties.

Can someone please let me know what is going on?

Adobe's doing its best to confuse the users, once again... The former is a signature field for a "regular" PDF form. The latter is a field for an Adobe Sign form, which is what it will be converted to if you tick the check-box that says "This document requires signatures" when you first enter Prepare Form mode. Doing so also limits what you can do with the other fields, so I would recommend you don't use it. If you already did you can switch it back by clicking the three dots button at the top of the Prepare Form pane and then select "Remove e-signing options":
