The 'Add Signature' prompt is gone from the Fill & Sign menu

The prompt to add a new signature is completley missing. It was there as recent as January and I don't recall updating Acrobat since. I have attatched what my options look like. I need to add a third signature.

Any clues as to why it's missing?
