What alternative PDF editors do you all use?

Auto-ocr is trash and impossible to turn off in Adobe Acrobat. I can't edit any doc with out the text having to be scanned and turning eventhing into a text box. All the previous posts and questions resolved nothing. Unchecking recognize text does nothing. This is such a garbage feature. The oldest post I found was from 2020 about the topic and hasn't changed. So what PDF editors do you all use that are not terrible to use?

That's what I already have and it's trash. I was asking for alternatives that are not Adobe. This community is experiencing the same as me and I want those people to answer so when some else gets tired of Acrobat Pro, there will be a useful answer. Unchecking that box does nothing useful .
