How do I add a new signature when the add signature option isn't showing?
When clicking on sign I can only use the existing previously saved 2 signatures.
How do I get the add signature button back?

Hope you are doing well and sorry for the trouble. As described you are unable to add new signature as its showing you the previously added 2 signatures.
From the description it looks like you want to add signature in the Fill and Sign tool, correct? If yes, you can add one signature and one initial in the Fill and sign tool. (Design behavior)
To add new signature you need to first remove the old signature/initial by clicking on the minus (-) sign and then add the new signature by c

Is there a way to add a "stamp" to documents (like adding a signature, but just a few lines of plain text, ideally with text formatted if possible)?

Your design sucks. Remove this limitation or make it obvious to the user why the add signature option is hidden from them.

Thank you, Amal!! This problem has been confounding me for a year. Why Adobe doesn't just SAY this in that dialogue box or elsewhere obvious in the fill and sign feature is incredible. Anyway, I'm so glad to have found the answer here.

Just wanted to add that I also wanted to add more signatures, as I need to sign on behalf of family members. Will try out stamps, but could not figure out what was wrong that I couldn't add more buttons. Would be helpful if you added a note to your documentation.

Previous Reader versions allowed multiple signatures to be stored. Why does Adobe reduce functionality and charge almost double for less functionality??!
Only one signature capability is a bug. Please restore the previous functionality!

If its not working as expected, Try to repair the installation from the help menu (Win Only) and see if that works.
Please try to reset the Acrobat preferences as described here https://community.adobe.com/t5/acrobat-discussions/how-to-reset-acrobat-preference-settings-to-defau...
You may also try to create a new test user profile with full admin rights in Win or enable the root account in MAC and try using the application there and check.

Why are you limiting how many signatures you can have? I can't even fathom why this fincutionality was removed. You ever think about people who maybe have more than one person using the machine at a time? Or how useful it is for adding a signature to all those stupid pdf's out there with every field available to fill out except the date for some reason? God forbid you have a functional type tool, but at least I could scrawl out a date to finish the form in thge past. Is this some sort of petty way to force more users to buy a subscription, just so they can get their own signature for friggin' Acrobat?
