It would be great to have the option to change the background color of pdfs to something other than blinding white.

You can't change PDF files in this way in the free Reader, but you can change how they appear on the screen.

Go to Edit (or the Reader app menu if you're on a Mac) - Preferences - Accessibility and tick the "Replace Document Colors" box, then change the Page Background to the color of your choice. You can also change the default text color there.
