What are some reasons that would cause a PDF in Adobe that is only 2 pages to  add a 3rd blank while Printing.

I would not like to print a 3rd blank page.

What options did you select in the Print dialog? If the size of the PDF pages doesn't match the physical page size you're printing to and you've select the Actual Size option then it's going to spill over to additional pages. Select Fit, or Shrink Oversized Pages, to avoid that from happening.
