How do you save one page from a large pdf?

I am trying to save one page from a pdf or export one page from a pdf but it seems the only options are the whole pdf rather than being able to select a specific page.

‌You can extract pages with Adobe Acrobat, not Acrobat Reader.

Your other option is to "Print" the file using a pdf printer driver.  You can then select which page to print and create a new file.  Maybe something like  Cute Pdf Writer.  There are others available and all very cheap.

So I have adobe Pro and I still cannot figure it out.  How do I do it?

Basically you would do it via Tools - Organize Pages - Extract.
