How to copy text from Adobe Acrobat Reader on a Windows PC?

This seems like a pretty basic question.   How do I copy text from Adobe Acrobat Reader DC to paste into another application?

If I select text in a PDF file the Copy option in the Edit menu repaims grayed-out and Ctrl+C does nothing.   The example shown here is from the owner's manual for the Nikon D810 camera.
