How to revert to previous Acrobat Reader version?

A few weeks ago my Acrobat Reader updated to version 2023.003.20284 | 64-bit, bringing some major, assinine changes. Primarily, huge, screen gobbling side bars that are controlled by each individual file, rather than a global preferences setting. Thus, every file that is opened does so with only a fraction of the window showing the file's content - the stuff that I am interested in.
While it appears that Adobe will thrwart my quest, I am desperate so will ask - is there a way to revert/re-install the previous revision?

Here is a screen shot of what I see when I open a document. About 2/3 of the screen is wasted with unwanted stuff, while the document is too small to read. Occasionally, the bookmarks are helpful/wanted (but not taking up so much screen space) - but my preference is for every document to open without either sidebar

PS - For others that might be reading this: based on Amal's comment about switching to the old UI, I found an option in the "Menu" to "Disable new..." (sorry, I clicked it, now it is gone and I don't remember exactly what it said). This appears to have taken me back to the previous version.

Is there any way to mass deploy this option ( Disable new ... ) - A GPO or setting in the administrator's console.
The new settings breaks some processes for us for a large number of users

Is it possible to switch the bookmarks/pages menu back over to the left side of the screen and the editing/controls menu to the right side of the screen the sway it was previously?
