Saving text files

When I save a pdf file as text from Adobe Acrobat it is saved in UTF-8 format.
The pdf is in Greek language and in order to make it readable from other programs that do data searching I have to open the text file from notepad and re-save in ANSI format.
Is there a way, a setting in Acrobat, to avoid this re-save ?

You can set the encoding via Edit - Preferences - Export from PDF - Text (Plain):
