Settings reset after closing application

So we are running into an issue where we need to sign off on behalf of other users via use of a stamp, and when using the stamp we do not want the user name (author) to show, so going into the stamp I remove it, then tick set as default settings, this works for any stamps we use after this and as long as the application itself remains open you can open or close documents and the settings are ok, but once you close the application and open it again you need to do this entire process again. this is not ideal for non-technical staff.

 

I have also deselected Edit>Preferences>Commenting>Always use Log-in Name for Author name.

I have also deselected Edit>Preferences>Documents>Restore last view settings when reopening documents (incase it is somehow interferring).

We are using Adobe Acrobat XI Pro v11.0.23

Any help would be greatly appreciated.
