what menu do I use to change the browser that adobe opens links with?

Anytime I am reading a pdf and I click a link it opens it in edge.  I want it to open in a selected browser.

You should install Adobe Acrobat Reader (free) and set your file associations to use it instead of a web browser to open pdf files.
