Any suggestion as to how to have documents opened inAdobe Acrobat reader DC converted from a black background with green writing into a traditional white background with black writing?

Sorry for the delayed response.
Check if you have "Use High contrast colors" option turned on. (below is the screenshot)
If it is, try clicking on Custom Color and check if that resolve the issue.

After 2 days of stress and tears I FOUND THIS ARTICLE. Oops on caps lock there...anyway, it worked. So relieved, question: What the heck is this setting there for in default?! I mean WWHHYYYY!
