When opening a PDF in Adobe Acrobat DC that was signed by a client I see unreadable text.

I am currently using Adobe Acrobat DC version 2022.001.20169 | 64 Bit. I created a PDF and sent it to a client to have them sign it. When the client sent the file back signed I was able to open it and read the document without issues. A few hours later i went to open the document and am seeing that the document is now unreadable. 

Adobe Acrobat DC version: 2022.001.20169 | 64 Bit
Windows Version: Windows 10 10.0.19044

Things i have tried to fix this issue. 
1. I've uninstalled Adobe Acrobat DC and reinstalled (this fixed the issue temporarily). 

2. I went into preferences for the document and set the rendering > use local fonts to disabled, and restarted the application, launched the document, but this didn't help. I reverted the change and then restarted the application, the text was still unreadable. 

3. I've tried opening the document on another machine, this worked fine, I then tried on a shared desktop environment, the document opened without issues. 

4. I am currently waiting for someone to log into my machine to see if they can open the document, as i think it may be windows profile related.
