Yes, I am using my licensed version of adobe, I just converted word file from gujarati font to pdf, how can I make pdf in gujarati language in read out loud mode?

Acrobat uses the operating system's TTS engine. If it supports Gujarati then you can do it, otherwise you can't.

Windows doesn't, as far as I know. Maybe the Mac OS does...
