I scanned 7 pages of a document as a .pdf file but it resulted in an almost unreadable product...too light. Is there a way to darken text? I'm on a Mac OSX.

You can conver the PDF to an image such as jpg or png, then download Gimp for free and edit the image.  Worked great for me.

If you have Photoshop, you can try adjusting the image using Curves/levels but no, nothing you can do in Acrobat.

The lightness or Darkness of the print is related to the scanner settings. If the Pdf is text that has been scanned you might can use OCR to over it to searchable (and therefore editable)  text you might can use Font properties th boldface the fonts. The better method though is to rescan the documents. And use the controls within the scanning software to increase the contrast, and mid tone brightness.
