It doesn't work. Whatever I try, the color swatch gets a √ but the filled in text stays black

The feature you are looking for is/was part of Adobe reader in version 11, if you downgrade to that version you can change the font color.

I found that you need to use Tools/Prepare Form first to edit all specs of a form field.
