I cannot convert a pdf file to excel or word. All that comes back is gibberish

I am trying to convert a PDF bank statemnt to excel. The file is converted into symbols in the excel file

As I understand from the description  above, you are getting symbols when you convert a PDF file into an excel, Is that correct?
