On one post it said to change the address in the Preferences > Email Accounts. Here is a screen shot. I changed the names.
Thom Parker told me that isn't where it changed and I can't find where to change it. Please advise.

If it is even possible, can I install a second copy of Acrobat and have its default email address be the one I want to use?

How about if I install another email program specifically for the email address I want to use.
Acrobat does not let me delete and default email address. The Delete button is in grey when the default email is selected:

@David Healy Sorry for the delayed response.
You would first need to add a different account. Once added, you will be able to set that account as default and remove the already existing account.
