I would have to manually download each and every adobe scan to my mac if they are going to be deleted (since they are not stored on my device) when creative cloud syncing files are deleted with the discontinuation. Does anyone know how to address this?

The Cloud documents will not be affected by the discontinuation of Synced files.
You can check https://assets.adobe.com/cloud-documents/ to see if your scans are available there. If yes, they are safe.

This page will also give you in-depth knowledge on downloading all the files simultaneously instead of going one by one.
