Use the delete function of Adobe Scan.

As mentioned that you were in the process of creating a PDF from a picture but it got deleted, kindly check if it is showing anywhere in the list of scans in the application. 

If not, try to look for it in the document cloud storage i.e https://acrobat.adobe.com

if it is not there too, that means unfortunately it wasn't saved and cannot be retrieved.
