Would you mind letting us know if the images used to create the PDF were deleted from your device?
If yes, that could be why the pages are showing blank white.
Also, please share a few pieces of information for further investigation:
1. The app version of Adobe Scan you are using (go to Home-> Profile-> About Adobe Scan);
2. The iOS version you are using;
3. A screen recording of the workflow you are following.
