I hope you are doing well. I am sorry for your experience with Adobe Scan.
Can you try offloading the application and then try signing in again.
To do so, go to Settings-> General-> Storage-> Adobe Scan-> click on Offload on the bottom right.

Hi, Can you try changing the internet connectivity of your device once and check if it helps.
Also, please check if there are any other adobe applications installed in your device and if you are able to log in to other applications too.
