Creating a Surround Mix in Audition without Dolby

I'm trying to create a basic surround mix of a film we just finished editing. I don't have surround speakers to test (I'm using a 2.1 setup), but I have access to the movie theater we are playing the film at this weekend to run as many tests as I need. 

 

Just finished watching Jason Levine's great 5.1 tutorial https://www.youtube.com/watch?v=BcYqm42QTbo&t=3032s

 

BUT...

 

There's no longer the Dolby options.  

 

1) What do I do now since I can't export to Bluray or H264 files using Dolby? How can I create a simple surround mix for the theater?

 

2) When exporting the sequence into Audition it had a few errors:

 

a) Bezier Keyframes were converted to linear  (okay, I can deal with that I guess)

b) Some audio clips have gain values beyond 15.00 dB. They have been lowered to the maximum gain value of 15.00 dB. (this one really stinks)

c) 3 of the 8 effects referenced by the file could not be found: Highpass, Lowpass, Bandpass.

 

The second one really kills me. Any way around that? There's lots of dialogue used that needed to be raised by more than 15db in post. When I try to edit the audio in Audition and maybe add gain there, I can't because I can't hear the CENTER audio. Do I need to pull the dialogue out of the locked center position, make the changes, then put it back? (I pushed that puck all the way up into the locked center position) I only have a 2.1 speaker setup.
