Can you use Adobe Audition to Create Cover Version of a Song (via Conversion), and if you can, then how do you go about doing it?

You can't 'convert' a song into a cover version of itself. To create a cover version of a song, you have to replace all if the parts by re-performing them yourself, or by using the services of what is generally called a 'covers band' - and that's what they will do; reperform the music.

As SteveG says no you cannot do that but what you could do is go to somewhere like this https://www.karaoke-version.com/ where for a few dollars you can download individual stems of a song (played by someone else) which you can mix yourself
