I have recently suffered eye damage and my vision is now nothing like it once was. I have great difficulty reading the texts and numbers in the user interface - light grey numbers and letters on a dark grey background are just smudges to me. I am making more and more errors in my work that needs to be fixed later.
I would like to change the user interface text to white instead of light grey, and increast the size of the font. I can change the overall font size of everything in Windows but that reduces the screen real estate i have to work on my files. And it seems like a bit of a sledge hammer solution - it affects hundreds of other applications as well.
I have looked through the Edit>PReferences and it seems you can change just about anything else BUT the colour and size of the user interface font. Have I overlooked/missed something?

I'm afraid you can't - this appears to have been an Adobe 'house style' decision some years ago now, and there's no mechanism for changing it. What you might like to consider though is getting a reader that speaks out the key functions as you hover over them (this has a name but I can't remember it!) - and also there are screen magnifiers that will selectively magify the area you've held your mouse over - Windows has a lot of this stuff built into it now, which is probably why Adobe's not so fussed about doing anything about it (that, and being run by corporate grey bean counters...)
