I know that Audition has the Sound Remover tool and you can train it on specific sounds and there is even a preset for "Remove Ahh and Umm". However, when I am editing an interview and when I try to use the preset, it removes basically nothing. If I train it on an instance of the speaker saying "Umm", it'll remove that specific instance and no others. Am I doing something wrong? I'm already paying for Audition, I'd rather not have to spring for Descript or some other tool in addition.

Not all 'umms' are the same - anything like. And the software isn't intelligent - it's looking for a very specific pattern, and if your other umms don't match it pretty closely, then it won't detect them. Also, please note that the presets are only a starting point, and you may well have to experiment with the sliders to get it to work better on your particular sounds.
