You'll have to uninstall those fonts in the OS I suppose, don't think this can be solved within Captivate which presents only the fonts you have on the OS.

Can you check the object styles in that theme using the Object Style Manager? It uses normally Trebuchet as default font.

Yes, it uses Trebuchet as the default, but when I begin a project I use edit - preferences to change it to Lucida Sans (one of the fonts for our brand). The Lucida Sans font looks like an italic now and a Lucida Sans Std font was added. When I open an existing project the text reverts from Lucida Sans to Times New Romans.

If you want the default theme to be different, please use a custom theme as default theme. Make the changes you want, save the theme and set it as default. Don't do it with Preferences. Have a look at my blog post:

You don't have to store that theme in the folder that is used for the default Captivate themes (Public Documents on Windows)

Are you saying that if I had created and saved a custom theme that when the available fonts in Captivate changed I would be able to use the previous font? And are you saying that because I didn't do that, there is no way to get my previous font list back? My co-worker has a different list of available fonts than I do. Her list has not changed.

I don't know exactly what you mean by 'available fonts changed'. The list of fonts you are seeing in Captivate depend on the fonts you have installed on your system. Maybe you have installed different fonts. They can be different from your colleague. I thought you were talking about the default font used in the theme you are using, that is why I explained not to use Preferences to do that but use a custom theme.
You can try to clean the Preferences. Run the CleanPreferences file appropriate for your system, which you find in the subfolder Utils under the installation folder. Captivate has to be closed. I'm not sure this will change the list with fonts at all.

Yes, the fonts I have available to use in Captivate are what changed. I did not intentionally download any fonts. That's why I think they downloaded with the game template. We tried the CleanPreferences. That didn't work, but appreciated the suggestion. We also tried uninstalling and installing Captivate. That didn't work either.

So, I didn't get any help from the answers under this question so I am leaving my solution/experience here for anyone else experiencing it.
If you are using fonts that you had to activate on Creative Cloud in order to use them in Captivate (e.g., Cronos, these are also known as "Typekit fonts" apparently), the project will only use these fonts if you are logged into Creative Cloud. If your fonts in your project or even more than one of your projects have randomly changed overnight while you weren't using the program, check to make sure you are logged into Creative Cloud. If you are using one of these fonts, logging in to CC will bring your fonts back without you having to make any complicated changes.
My fonts all changed without me installing or uninstalling anything, and I didn't have to uninstall or install anything to get it solved. Everything on this forum seriously overcomplicates this, and I have no idea why I can't find this info anywhere on the website or in the forums.
It would be nice if we could just download fonts into Captivate so we don't waste any time with this problem. But as it is, that's not an option.

Sorry, but you added this to a thread which was not talking at all about Adobe fonts (formerly Typekit fonts)!
I have answered this question multiple times: you need to log in the CC app (you don't need to have a CC account, but you need to install the app). That is also in the Captivate Help.

If it has been answered multiple times, the info should be made more easy to find. I looked for this info for an hour and a half, and only got the solution after talking with an Adobe help representative for another 45 minutes (because it was not anywhere close to the first suggestion for troubleshooting). It doesn't show up in Google searches after repeated searches (even if you know to search "Typekit fonts," which I did not). Searching the forums got me a lot of unrelated answers and not the answer I needed (and I saw several places that seemed to describe the same problem that were marked "unanswered," so that didn't help me either). There's no direct and apparent listing of this problem in Captivate Help (I clicked everything on the Captivate Help page and did not find it anywhere). This information should be made more easily and directly accessible; it seems to be fairly common problem that should be easy to solve, but it's not going to be easy to solve if so much extensive digging has to take place just to find the information.
People like myself who don't know the difference between Captivate fonts and Adobe fonts (Captivate is an Adobe product so the difference must be very subtle) are also going to get these issues confused. Clarification and definitions where applicable will be useful for clearer communication.

There are no Captivate fonts. You have websafe fonts, which is a rather limited group in top of the dropdown list under Character in Captivate. Those websafe fonts will display the same on any system.
If you use a non-websafe font, it will only display correctly if the learner has that same font installed on his system.
The former Typekit fonts, now renamed to Adobe fonts are a way to circumvent the limitation to websafe fonts, because they will be download on runtime on any system watching a course using such a font.
This is 'basic' website information, not really Captivate info.
