Click on the "Project" menu and then select "Variables" - you should then be able to select the unwanted variables and "Remove" them

If you are using Captivate Classic this isn't always possible.

 

Sometimes the variables are still linked to Advanced Actions or templates that are no longer accessible via the Advanced Actions dialog.  The recommended process when deleting redundant Advanced Acions is that you are supposed to edit and remove any references to custom variables before then deleting the actions.  Most people don't follow that workflow. So, the problem here is the project file can have"phantom" actions that cannot be deleted and are preventing their linked variables from also being deleted.

 

The only way to usually resolve this issue is to create a new blank project and copy your slides over to it.  But that's also a lot of trouble and can result in other problems. 

 

So if you can live with having a few redundant variables in the project, just ignore them.
