Is there some sort of email widget that I can use for email within Adobe Captivate 8?

I suppose I can use a text entry box.

you could do a simple mailto: link as a hyperlink in the content, which will launch the user's email program (i.e. outlook, thunderbird) - IF they have one, and then it's just a simple email they can edit and have to click 'send'.

What are you trying to capture?  It is possible to send email through Cp, but it takes custom programming.  You would need to send info to a Google Spreadsheet or Form and have Google/gmail send out the email.

The widget still is there, but maybe you want a learning interaction? Widgets are only compatible with SWF output, not with HTML5 output.  There is no mail learning interaction (compatible with HTML5).
