Do you have to delete the apps once a free trial is over?

No, but... without an active subscription, they (obviously) won't work anymore.

 

Note that if you don't cancel in time, your free trial will automatically convert into a paid membership.

you may be beyond the free trial/refundable period.  copy and paste here a screenshot of your main account page, https://account.adobe.com  > plans > plans and payment page

it says you'll soon be able to manage your plan.  i imagaine there's a payment issue that's taking time to resolve.  you can confirm with adobe support.  there are 2 ways to contact adobe support; chat and twitter (now x):

chat:
if you have or want to purchase a subscription, use a browser that allows popups and cookies
and click here, https://helpx.adobe.com/contact.html?rghtup=autoOpen
in the chat field (lower right), type AGENT
be patient, it can take quite a while to reach a human.

twitter/x:
tweet @AdobeCare

p.s. if you're contacted by anyone (via email or private message), it's much more likely to be a scammer than an adobe representative.

Adobe won't delete apps for you if that's what you're asking.  

You must initiate that procedure yourself from your Operating System's add/remove software panel.
