I have some slushy files on the remote server that I wish to delete.
Dw 2021 does not deal with these types of files and refuses to delete them. Could it be due to some setting in the program?

The unwanted files are now deleted on the remote server.
Despite that, they are still in my DW 2021 and cannot be removed.

What happens when you try to delete them? Defined sites in Dreamweaver are just pointing to your local drive so unless you don't have permission to delete the files or the folder they are saved in there is no reason you should not be able to delete them.

Gets a message that the file activity was not performed.
It's only files that I gave examples of that can't be deleted. As an example, I can upload a .jpg file to the remote server and also delete it on the remote server.

Next time you go to delete the files, open up the FTP log, Site-->Advanced-->FTP log and share the error number being returned. This sounds like a permissions issue on the remote server.

When trying to delete a file from the remote server, I received this message
/wwwroot/indexfiles/Affisch A4 utst llning.jpg - an error occurred - An FTP-error occurred - it is not possible to delete the remote file Poster A4 utst llning.jpg. Access denied. The file may not exist, or there may be a permissions issue. Make sure that you have the correct permissions on the server and that the server is configured correctly.
How do I proceed?

Maybe renaming the file to "affisch-a4-utst-llning.jpg" will help.
It is best to get into the habit of writing your folder and file names in lowercase with no spaces and with words separated by hyphens, see https://developer.mozilla.org/en-US/docs/Learn/Getting_started_with_the_web/Dealing_with_files

Which operating system do you have?
Where do the PDF files reside on your computer?
Can you delete the files with your OS file manager (Win File Explorer or Mac Finder)?
