How do I make it that instead of using the shape's color for the bevel (grey), it uses the image inside it as a base? I want to make the bevel like in the original (the bevel is using the image as a color)

Use "Map Art"
But frankly, it might just be a better solution, to expand the 3D object, delete what you don't want, and then overlay it on a clipping mask with the image inside text.

Sadly, "Map Art" doesn't produce any different results.
About the second option, can you elaborate more? I'm still learning Illustrator and if I'm much more advanced in Photoshop. Sadly there, the bevel edges are not sharp as in Illustrator.

The other option is to use Object > Expand appearance. This will produce some really complex kind of artwork consisting of groups and subgroups and clipping masks and stuff.
You need to delete the inner fill of that and then overlay it on a second version of that text with the image in it.

Do you mean that I first create the bevel as I want, then Expand appearance, then delete the inner fil (leaving the bevel only?) and then overlaying it on the same text but with the picture? Would that apply the bevel contours to the picture, because that's what I need in the end?

That's what I mean, but I really don't know what you mean by "applying the bevel to the picture", because that's not how Illustrator works.

Well I mean when I apply bevel, I want the highlights (in this case the top and left of the letters) to lighten the picture inside the text, and the shadows (the bottom and right part of the text) to darken the image inside the text. In Photoshop this is simply achievable with the bevel and emboss settings but because the edges are not sharp (the inside of the N for example), I can't use Photoshop so I resorted to Illustrator. But even when I have an image inside the text, it doesn't apply the highlights and shadows to the picture, but uses a plain color (grey). I hope this makes it clear

That won't happen automatically. You could create additional objects to simulate that.
