Hi, working with 3d and illustrations on materials was so easy before; we made a circle,
then in 3d extracted it and then you could place an image on the front, back, side, etc.
you chose an illustartion (symbol library) and then you chose where you wanted it to appear.
In Illustrator 2024 - there's only an option to place an illustration on a 3d object. But not WHERE and how you want to place it. You cannot decide if it's on the side, front, top and cannot rotate it as well. Why> Now it's not usefull anymore. Help! is there a way to gt this back ? Or am I missing something ?

You can move it around by just grabbing it. But the distortion often does not work correctly.
You can keep using the old way. Just apply a Classic 3D effect instead of 3D and materials.

You can place a symbol via the Materials > Graphics tab, then use its bounding circle to reposition, resize and rotate:

I'm not able to reposition it. I can scale and rotate it as well, but can't find a way to move it.

Can you show your object with the 3D panel open at the graphics tab? You just click and drag to move it, so it's difficult to speculate what might be going wrong.

I think it's a scaling-problem – when I scale it below 100%, I can't move it anymore, just rotation and scaling, but works above 100%.

I can't replicate in 29.1 -- what version are you using?
