Actions - not working properly, can't edit, can't re-record

Hello!

We recently upgraded to Illustrator 2021 (from 2019) at our print shop--third-party software was finally upgraded at the same time.

We've noticed now that our Actions are giving us issues (adding in crop marks, not reducing file size as before, etc.).  This has happened before, so in the past, we've simply rebuilt the actions from scratch. The actions consist of saving the .ai file as a .pdf with a custom preset to a couple different locations--one action also contains a "Fit to Selected Art" command (under Object/Artboards).

We've attempted to re-load previously saved actions, but they don't work correctly (preset settings aren't being honored).  We've tried to edit the existing actions, and even re-record them, but certain commands are no longer recording.

These are simple actions--one saves a high-res and a low-res .pdf to two different folders, and another saves a high-res .pdf with the artboard cropped to the selection.

We're running Illustrator 2021 (25.3.1), Mojave OS (10.14.6).

Can anyone shed some light on this?  Thanks in advance!

Can you provide some of the .aia files, so one may have a look at it?

Sorry for the delayed response--spam filter.

Unable to attach an .aia file (or a .zip file) within this thread--is there a better way to attach files?

You may use any file sharing provider (for example Google Drive or your CC repository) and post a public download link.

Here's a link to the actions (I attempted to remove formatting to get rid of a "Post flooding" message):
