I know this is probably something everyone already knows but I'd have loved to read this answer a few hours ago from Googling...
If you have two lines intersecting and you want to add an anchor point directly at the intersection (to keep a curved line perfect or something like that) you can click "+" to turn on the add anchor point tool (which I couldn't find in the menu) and click on the intersection. The problem is... most of the time you've drawn on top of the line you want to trim and it adds the anchor point to the wrong line (the one that's on top). This is stupidly easy and a headslap moment for me...
Order the line to top and the intersection anchor point will be on it instead... then move it back down.
I'm embarrased to say this didn't occur to me for quite a while but I sincerely hope this helps someone who's struggling.

You can also select and then lock the upper path, then use the Add Anchor Point tool at the intersection as indicated by the Smart Guides.
