Add unicode characters not available for selected font to a glyph set

Hi! 

I am using Illustrator (v. 28.3) to create a family tree. I would like to make use of genealogical symbols. The problem I am running up against is that the symbols I would like to use are not available for the font I am using. Is there a way to create a glyph set using unicode characters, so that I can quickly and easily insert the symbols in the desired style into my document?
