Adding custom page sizes

When I open a new file, how do I get the page size I am using to show up in the Custom drop down list?  So I can easily use it again.

In Photoshop, it is called Document type and all you do is click on Save Preset to save it for future documents.  So how is this done with Illustrator?  (Adobe Illustrator 2019)

If you save a file to C:\Users\Username\AppData\Roaming\Adobe\Adobe Illustrator XX Settings\en_XX\x64\New Document Profiles, it will be available in that list as a 'document profile'.

The document Doug references is a GEM!

The clearest explanation I've ever seen of this somewhat complex topic.

There's a step-by-step process of creating a Document Profile at the end (which answers your question simply). But reading through the entire document will make the whole structure of how Illustrator creates page sizes and stores assets (Swatches, Brushes, Symbols, Graphic Styles), how to move them from one version to another, and so on. It also distinguishes between how to use Document Profiles in the current New Document dialog, or the (easier) "Legacy" New Document dialog.
