Exactly how did you uninstall. Did you use the cleaner?
Use the Creative Cloud Cleaner Tool to solve installation problems

I've had the same problem too, I've used the cleaner tool and everything. My Adobe Illustrator CC 2015 has been working fine up until yesterday.

Does using the cleaner delete anything I should be worried about? Like documents (ai, psd, pdf, etc.) or brushes?

You want to backup stuff inside the presets folder to a different place
You also want to backup stuff inside your user library.
This is where stuff is located (it's a long list)

The cleaner removes your Illustrator, and when you install you will be back to the default settings. So you will get back the brushes that came with illustrator, but not the custom ones you may have created.
Your documents will not be touched, unless you save them in a very inappropriate location (eg: within your illustrator app or system folder)
Good design practice is to back up and keep organized your custom brushes, workspaces, graphic styles, spellcheck wordsw added, etc. Your libraries are saved with your account on the Adobe cloud so you do not need to back those.
