Adobe Illustrator Workspace Organization Question

Hello,

I'm watching a "tutvid" youtube video tutorial on how to design a fox logo. Tutvid's panel area looks different than mine and I cant seem to figure out why I can't find certain tabs, like "character" "paragaph" and "open type" anywhere. I attached a photo showing what I mean.
