Adobe shows a much darker CMYK colour than Pantone Swatch

I'm using Pantone 425 C and CP from the printed Pantone Color Bridge Coated (1st edition, 3rd print).

If I type in 425 CP's CMYK values to Adobe Illustrator, the grey I get as a result is much darker than the grey in the original Pantone Swatch. If I type in RGB or Hex in an RGB document, then it look's good, so the only problem is working with the CMYK. Is it possible that the printed Pantone Swatch shows a lighter colour than it is actually, or Adobe has a darker version of the colour? When I printed out the artwork we had the result in the dark version.

Stick with the 425C and disregard the "CP" version.

Are you going to be printing with the Pantone Spot Ink? Or you just looking to reproduce it in CMYK?

Yes, we might print Pantone Spot Ink. We'd like to have a starting point (Pantone) and determine the right RGB, Hex and CMYK values with it.

In Adobe, if we convert 425C's RGB to CMYK, it looks good. But converting from 425C to 425CP in Adobe creates a big difference. However, in the Pantone swatch book the difference is tiny.
