Auto fill with the pen tool....

I really liked drawing in Freehand because once I finished a path, it would automatically fill in with the color I selected prior to starting the path.  In Illustrator, when I draw and have a fill color selected, it automatically keeps filling in the path with color while I am drawing, which makes it difficult if I am tracing something.  Is there a way to turn off the autofill, but still have it fill in my path with color once it is complete?  It is annoying to have to click a fill color every time I am done drawing a path.  I hope that makes sense.  Any help is appreciated!

Or just switch the color to the stroke with Shift-X, and then switch it back when you're done.
