First of all I would delete the stroke.

Then you should already get a smoother result.

But you could just select number of steps and then input whatever number of steps is appropriate.

There is no smooth color blend in the blend tool. There is a solid color option instead

Hi! Same problem here but don't want to use specified steps. I'm using Smooth color but only shows steps. I tried with simple circles, tried converting them to compund paths, I tried with lines but nothing works. It doesn't show a smooth transition. What can I do?

"Smooth" is an automatism for calculating the number of steps based on the color values of the objects, that only works under certain circumstances. And it doesn't work with gradients, because gradients have multiple colors in them and then Smooth cannot calculate the number of steps.
