1. Reset Oprion is greyed out in the toolbar menu and I am unable to reset tool bar.
When I make a change to a tool (like adding another point to a 5 point star), the next time I use that tool, the settings are still set at the new 6 point star).
1. Can I set tool to revert to default after using?
2. Is there a simple shortcut to reset an individual tool to its defaults?
3. Failing the above - Why can't I reset the tool bar.
Attached is screen shot of menu I used to try and reset.

You could try resetting your Illustrator preferences. Hopefully by reverting the program to its defaults the issue will go away.
To do so in Windows:
For Windows Users: You can try the quick way of resetting on a PC which is to hold down Ctrl + Alt + Shift when launching Illustrator and respond affirmatively when asked if you want to reset. There have been some recent reports that the window asking if you want to reset is not popping up but that the prefs are being reset anyway. If this works great but if it doesn’t you may have to manually delete them.
To do so: On Windows 7 and above the preference files are hidden. To find them go to the Control Panel and open Folder Options and then click the View tab. Then select “Show hidden files and folders” or “Show hidden files, folders or drive options” in Advanced Settings. Then delete (or rename) the folder at the end of this path: C:\Users\[User Name]\AppData\Roaming\Adobe\Adobe Illustrator [version number]\ Settings\<Language>. Make sure that Illustrator is closed when you do this. When you relaunch the program it will create new preference files and the program will be at its default settings.
The advantage of manually deleting preference files is that after you’ve reset up the program (make sure that no document window is open) to your liking, you can create copies of your personalized “mint” preference files (make sure that you quit the program before copying them—that finalizes your customization) and use them in the future to replace any corrupt versions you may need to delete.

THank you I did a manual reset through the preferences menu and now see the reset toolbar option.
Is it possible to reset an individual tool within a working session? For example, if I select the star tool and change the number of points and the angles between points, these changed settings are what comes up the next time I use the tool. While it's easy enough to change the number of points each time, it's not as easy to remember/change back to default settings for the angles of a standard star. I'd like to be able to use the tool, modify the shape as needed for that instance but then return to the tool in the future and have it set back to factory defaults with regards to angles and points

Hi there,
Thanks for reaching out. You are using Advanced Toolbar. That is why you are unable to reset. As when the Advanced option is selected, all the tools are available in Toolbar. You may drag any tool you don't want to use in the "All Tools" menu or choose Basic Toolbar and add or remove the tool to enable the reset option. I hope it clarifies.
