Can’t see brush stroke using art brushes

Others can but I only get the outline when using art brushes even on my IPad. I've tried Preferences>real time and it's on and off definitely doesn't work. I'm at a loss and so excited to ink good drawings.

Basically, Illustrator is capable of showing live previews when drawing with Art Brushes (or Pattern Brushes), but only when GPU preview and Real-Time Drawing and Editing is turned on while using tools like all live shape tools (ellipse, rectangle etc.), the Star tool, the Line tool, the Arc tool or the Spiral tool. Also, the Curvature tool can do it. It's even better than the live preview of calligraphic brushes.

For some reason, currently it doesn't work with the Paintbrush tool or the Pencil tool. Well …

I am having the same issue. GPU preference is checked. If I set the variable width present and brush definition and brush size, it reverts to 1 pt, Uniform and it is defaulting to the 5.pt brush instead of basic.  I can add it after, but that is not helpful and it has to be done to each stroke.  I am on Monterey 12.6.3 and AI 27.3.1. Hope somone has the fix for this.  Fingers crossed.

So you want to draw using a varable width stroke? Then don't use the brush tool for drawing. Use the pencil tool.

Calligraphy brushes can do a realtime preview while drawing with them. Art brushes can't.

Can you please post a screenshot of your artwork and the brush setup?
