Changing the fill color

I want to change the fill color of this text [white to red] but it does not come. How to fix it? video is attached

After removing the fill at object level, select the characters you want to change with the type tool and select a fill.

Use the appearance panel to switch between character and (Type) object level. It will make things much clearer.

Appearances for type objects have two 'levels' -- the Characters, and the Type object level. Character level is by default below the object level, but you can drag it above.

When you select an object with the Type tool, you're selecting the Character-level appearance. The appearance panel looks like this:

At character level, the type has a black fill, but you can see that the Type object level has an appearance (in this case a fill) by the little stroke/fill icon next to the 'Type' item in the appearance panel.

To access the object-level appearance, either double-click on 'Type' in the appearance panel, or select the type object on the artboard with a seclection tool (black or white arrow). You can see the magenta fill at this level:

If you want to use only character-level appearances, delete the fill from this level. You can see after doing this that the Type appearance is listed as 'Type: No Appearance' in the Character-level appearance:

If you apply different fills to different characters in the type object, they will show in the appearance panel when selected by the type cursor:

I'm not sure what you mean. You have nothing selected?

Edit: Guessing at your meaning here -- When you select a type object with the type tool, the stroke/fill in the control bar and toolbar will show Character-level appearances.

When you select a type object with a selection tool, the stroke/fill in the control bar and toolbar will show Object-level appearances.

Unless you change the hierarchy by dragging the Characters above any object-level appearances in the Appearance panel, you won't see the fill at character level if you have a fill at object level, because it will be below it.

Normally we use this tool to decide fill & stroke colors. In this case why appreance panel is used & this panel does not work.

Those icons can only show one 'level' of appearances. Appearances can be set at multiple levels (characters, objects, groups, layers).
