How do I permanently change the 'PAPER SIZE" unit from mm to inches?  I tried just typing it the numbers then put inches on the end but it reverts back to mm. Thank you!

I just realized that what you are showing is your printer's page setup provided by the OS. It is not actually part of Illustrator. As a matter of fact the first time you use it you get the dialog warning shown below:

I will admit that I also use this page setup when I print but as the warning says the print options do exist within the Illustrator native part of the Print dialog window. You can choose your page size there if you are having problems with the OS provided page setup.

You can change that globally in the New document dialog window. I've included both the Legacy version and the current version of that window in the screen shot below:

After you open and save your document quit the program and then reopen it. Then check the new document window again to confirm that the change has registered.

Hello, Bill!

Thank you for your reply. My global setting has always been inches, I also tried to do it again, closed and open the file and choose print but it still shows mm on the Paper Size   Screen Shot 2017-09-27 at 12.26.26 PM.png

Yes! I see that popping  before going to the next page. I always see it but ignoring it at all LOL , Is there a way to change that from my MAC OS or should I consult MAC? Thank you , Bill! You've been so helpful!

I found the answer to my question , Bill!

I went to the   system preferences of Mac and went to Language and Region and clicked Advance and changed my Measuring Unit to "US" from "Metric"

You can try consulting Apple but I suspect it will also vary depending on the printer that you're using.
