Was having difficulties to make my text blend with the background? I have done this previously with photoshop and usually it’s just doing a full and right click and select content aware. However, haven’t been able to find anything for illustrator.

There is no such function. Why should there be? AI is a completely different program aimed at vector design, so what good would pixel-based fill functions even do? You have a fundamental misunderstanding here. That aside it's not even clear what you are really trying to do, so a better explanation would be required. There may be ways to do it in AI, just not with a simple click and relying on automated functions.

I could see it being usful for quickly creating bleeds without the large file size of photoshop. For example if a business card had a patern that needed to be extended into the bleed. I vector fill could be useful. It would basically have to do an image trace and then use that as the fill in. Obviously you couldn't use it for photo based images.

The best practice is knowing what kind of bleed is needed (if any) when starting work on the design. The bleed gets factored into the design from the outset. It's a backward approach to try adding bleed to an existing design.
